When you want the taste of the middle east, this salad dressing can hit the spot. This dressing is very simple. It contains hulled tahini, lemon juice, garlic, and honey.

Tahini is a healthy fat and is made of sesame seeds. It’s high in magnesium which can help to lower blood pressure. Low magnesium levels in the body have been linked to diseases such as osteoporosis, high blood pressure, clogged arteries, hereditary heart disease, diabetes, and stroke.

Tahini is also high in B vitamins which among so many benefits, aid digestion, maintain a healthy nervous system and helps with energy levels.

How to make this dressing

This dressing is quite simple. You’ll want to get your ingredients in front of you. Juice your lemon, peel your garlic clove and throw all the ingredients into a blender. These are tahini, garlic, lemon juice, honey, salt and pepper.

Blend and have a taste. Consider the consistency. If you prefer to be lighter and runner, add water as instructed below. And that’s it.

What is the difference between hulled and unhulled tahini?

Hulled sesame seeds have their outer layer (kernel) removed. Removing the outer layer can change the content and availability of certain nutrients. For example, some of the b vitamins are higher in hulled and lower in unhulled sesame seeds and some b vitamins are higher in unhulled sesame seeds versus hulled.

Unhulled sesame seeds have an added complexity to their taste, you’ll notice a taste of bitterness in the unhulled version. That is why I prefer the hulled version for this recipe.

How to make the dressing lighter and runnier

If your dressing is too thick and you prefer it to be more runny and light, just add water. It’s that simple. Add a little bit at a time, blend, and add more if you still feel it’s runny. Remember that you may dilute some of the flavors so keep tasting to see if you need more lemon juice, salt or garlic.

So let’s get into the recipe.

Middle Eastern Tahini Salad Dressing

This delicious salad dressing contains tahini as its main ingredient. It goes very well with the middle eastern halloumi salad you can find a link to above.

  • Blender
  • 1/2 cup hulled tahini
  • 1 lemon
  • 1 clove garlic (If you don't like the strong taste of garlic, reduce the size. A small clove is enough in most cases.)
  • salt and pepper to taste
  1. Juice the lemon removing pulp and seeds

  2. Peel your garlic clove

  3. Add all ingredients to the blender

  4. Blend and once you have a smooth consistency, check the thickness and taste.

  5. Add water if you feel the dressing is too thick. If you add water, check the taste and correct as required.
